In my travels around the world while serving in the armed forces, I have tasted amazing local comfort food, but none of these delicious comfort  food gems are as close to my heart as the taste and wonderful aroma of my Latin/Spanish foods. The delicious flavors and combinations of a Mangu (crush plantains) breakfast covered with seasoned sautéed red onions with scrambled or fried eggs, two slices of Salchichon (a type of Dominican sausage), Longaniza and the piesta résistance two slices of white frying cheese. Damn! I am getting so hungry writing this.

All my life I drempt of being many things, a photographer, artist and interior designer and much more. Yet the idea of opening a restaurant always stayed with me since a young adult. I wanted to create the best comfort food in the world but I just did not have the capital to open a full fledged restaurant. Luckly for me the food truck craze hit the streets of some of the big cities in America and my dream to open a business with great food now became possible.

With the support of my brothers and mother I was able to bring to the world a delicious mish-mash of many of the foods I grew up with. This labor of food love became "Bravo! On The Grill", so named in honor of my fathers last name. Its the expression of the hopes and dreams made from the closeness of my Dominican/Caribbean heritage, it's music and culture which has spread its wings across the world. These Latin/Spanish comfort foods have origins and influence from Dominican, Puerto Rican and Cuban Cuisine.
